Benefits of Cucumbers + Cucumber Salad Recipe

Cucumbers are considered a superfood.  High in nutrients, vitamins, minerals, and low in calories, cucumbers are a food that you should be adding to your list of staple foods.  Because cucumbers are 95% water, eating them can help to rehydrate your body and replenish daily vitamins.   Vitamins in cucumbers include A, B, C and E.   The minerals in cucumbers (potassium, calcium, phosphorus, magnesium, and iron) are highly alkaline so it neutralizes the pH of your body from the excess acidic waste produced in the body.  From the vitamins and minerals,  this superfood is also healthy for your outsides too as it keeps skin, nails, and hair healthy.   Other benefits are that it is a diuretic (helps with bloating), encourages elimination of waste from bloodstream, can reduce risk of cancer, and high in fiber for healthy digestion.

I love cucumbers.  By itself, dipped in hummus, in a salad, and even as a salad, cucumbers are delicious to me.   There are many variations of the cucumber salad, which is the base of the salad.   My mom has a great Thai version recipe with fish sauce, basil leaves and lemon juice.   This version I am sharing with you is from my roommate and is more universal to everyone’s taste buds ;-)  It is easy, cheap, and quick to make and can be paired with many meals.   We have been making it for 2 weeks now and eating it by itself, as a dip, and as a topping in our burritos. Cucumber Salad

Ingredients

  • 4 cucumbers
  • 1/2 red tomato
  • 1/2 small red onion
  • 1/2 cup chopped fresh parsley
  • 1/2 Maggie chicken bouillon cube or Goya cube
  • 1/2- 1 tbs apple cider vinegar (to taste)
  • (optional) Ocho Rios Chicken seasoning

Directions

1.   Peel then cut cucumbers into halves across and down the center.   Clean out seeds.   Dice cucumbers into small pieces

2.  Clean and dice tomato and red onion into small pieces.  Mix in a bowl, cucumbers, tomato, onion, and parsley

3.  Mix in well the chicken bouillon cube and apple cider vinegar.   For added flavor mix in 1 tsp of Ocho Rios Chicken seasoning.

Left-overs can be kept in the refrigerator for up to a week.   Enjoy!
